Abstract

Common bean (Phaseolus vulgaris L.) is a legume of high nutritional value, rich in proteins, fibers, minerals, and bioactive compounds. It significantly contributes to food security and is widely consumed in Mozambique, serving as an essential source of nutrients in the population’s diet. However, its quality can vary due to factors such as soil type, agricultural practices, and storage conditions. This study evaluated the nutritional quality of common bean (Phaseolus vulgaris L.) of the white and magnum varieties sold at the Waresta Wholesale Market in Nampula City, Mozambique. Interviews were conducted with traders regarding transportation, storage practices, and product origin, in addition to laboratory analyses to determine moisture, ash, and mineral content (Ca, Mg, K, P, and Fe). The studies were carried out at the IIAM Soil and Plant Analysis Laboratory using gravimetric methods, volumetry, and spectrophotometry. The results revealed significant differences (p<0.05) between samples: the white bean showed higher moisture (12.98%) and phosphorus (458.89 mg/100g), while the magnum variety had a higher iron content (2.01 mg/100g). Both types generally met international food quality standards set by organizations such as FAO/WHO. The data indicate good nutritional quality, although improvements in transportation and storage conditions could optimize nutrient preservation. This study underscores the significance of quality control in the grain trade and highlights the necessity for public policies to support local traders.
